Meaty Vegetarian Chili
Ingredients
1 cup dried black beans, soaked
1 cup dried kidney beans, soaked
2.5 cups vegetable broth
1 tbsp organic tomato paste
1 can (28oz) organic whole tomatoes
1-2 tbsp olive oil
3-5 garlic cloves, minced
1 med yellow onion, chopped
1/2 red onion, chopped
4 carrots, peeled and chopped
1 yellow bell pepper, chopped
3 stalks celery, chopped
1 bay leaf
3 tsp cumin
2 tbsp red chili powder
Red pepper flakes
Salt/Pepper
Instructions
Soak beans overnight or for 4-8 hours. Cover fully with water. The longer you soak the shorter cooking time.
Prep and cut all ingredients ahead of time to make the cooking process simple and easy.
Add olive oil into dutch oven or medium-large sized pot. Once hot, add garlic. Cook until fragrant. Add in the onion, stir and cook until translucent.
Toss in carrots, celery and bell pepper. While that’s cooking, pour can of tomatoes into a bowl and mash them with your hands or with a big fork.
After 5-7 minutes, add in the rest of the ingredients and let cook until beans are tender and soft. Add salt to taste and pepper flakes for spice.
